In Europa \u00e8 solo la fascia premium del mercato che offre realistiche opportunit\u00e0 di crescita, per lo pi\u00f9 con un adeguato imballaggio in cartone.<\/span><\/p>\n<p>&nbsp;<\/p>\n<p style=\"color: #000000;\">Negli ultimi tre anni l'industria del cioccolato ha visto una divisione del mercato. I principali produttori non stanno registrando praticamente alcuna crescita. Il mercato \u00e8 estremamente sensibile ai prezzi, \u00e8 difficile ottenere aumenti di prezzo senza perdere quote di mercato.<\/p>\n<p style=\"color: #000000;\">Anche i prezzi di ingredienti importanti stanno aumentando. Nell'UE, il prezzo dello zucchero \u00e8 aumentato da 600 a 720 euro per tonnellata nel periodo 2008-2013. Il prezzo del cacao sul mercato mondiale ha oscillato tra i 2000 e i 3800 dollari per tonnellata. La situazione non \u00e8 diversa per le nocciole, il secondo ingrediente pi\u00f9 costoso dopo il cacao. I prezzi sono raddoppiati negli ultimi tre anni.<\/p>\n<p style=\"color: #000000;\">Martin Dowideit dell'\"Handelsblatt\" ritiene che: \"Il cioccolato \u00e8 un prodotto soggetto ad acquisti d'impulso. Non fa parte della lista della spesa, la confezione \u00e8 la tentazione\". Il consumo mondiale \u00e8 guidato dalla Svizzera, dal Regno Unito e dalla Germania - gli svizzeri sono i campioni del mondo con un consumo annuale di 11,9 chilogrammi all'anno e a testa.<\/p>\n<p style=\"color: #000000;\">Non sorprende che gli svizzeri abbiano scoperto presto il vero valore di questa delizia marrone. Con i prodotti Finest Pralin\u00e9s, Lindor ed Excellence, Lindt &amp; Spr\u00fcngli \u00e8 leader mondiale nel settore del cioccolato di alta qualit\u00e0 ed \u00e8 presente in oltre 100 Paesi. Gi\u00e0 nel 2004 Lindt ha dato il via alla tendenza delle tavolette di cioccolato, passando da prodotti di massa a basso costo a un \"po' di lusso\". Questo ha attirato molti imitatori da allora.<\/p>\n<p style=\"color: #000000;\">\"La nostra serie Excellence, con un contenuto di cacao del 70% e oltre, ha generato vendite fantastiche\", afferma il direttore di Lindt, Adalbert Lechner. \"Il cioccolato Lindt \u00e8 quel pizzico di lusso nella routine quotidiana che viene apprezzato come ricompensa dalle persone, anche in tempi economicamente difficili\". Questo segmento medio con marchi come Lindt, Suchard, Hussel o Hachez \u00e8 praticamente confezionato esclusivamente in cartoni. \"Ci sono quattro ragioni principali che giustificano l'uso del cartone per le confezioni di cioccolato premium\", afferma Marie-Eug\u00e9nie Barrelet di Villars Ma\u00eetre Chocolatier: \"costi di confezionamento, sostenibilit\u00e0, qualit\u00e0 di stampa e velocit\u00e0 di sviluppo\".<\/p>\n<p style=\"color: #000000;\"><span class=\"Stil4\" style=\"font-weight: bold;\">La qualit\u00e0 avanza<\/span><br \/>\nSecondo il consulente alimentare svizzero James Amoroso, il cioccolato ad alto prezzo sta ottenendo una crescita notevolmente maggiore rispetto ai prodotti di massa: \"Questa tendenza probabilmente continuer\u00e0, perch\u00e9 la gente sta diventando consapevole che il cioccolato dovrebbe essere consumato in occasioni speciali e non in grandi quantit\u00e0\".<\/p>\n<p style=\"color: #000000;\">I produttori e i fabbricanti di specialit\u00e0 hanno sfruttato al meglio queste nuove opportunit\u00e0 sul mercato del cioccolato. Ad esempio, il nuovo arrivato \"myswisschocolate\", fondato nel 2010, vanta gi\u00e0 100.000 clienti in 32 Paesi per la produzione personalizzata o gli ordini online. Su myswisschocolate.ch \u00e8 possibile ordinare una variet\u00e0 di ricette e progettare la propria confezione, naturalmente in cartone. Il fondatore Sven Beichler afferma che: \"I consumatori vogliono prodotti unici che soddisfino le loro esigenze individuali, piuttosto che prodotti di massa. E le persone sono disposte a spendere per un prodotto individuale di prima classe\".<\/p>\n<p>Dolfin e Pierre Marcolini in Belgio, Coppeneur o Wagner in Germania, Damian Allsop o Willies Cacao in Inghilterra, Michel Cluizel, Jean-Paul H\u00e9vin, La Maison du Chocolate, Patrick Roger o Valrhona in Francia, Domori o Stainer in Italia, Xocolat o Zotter in Austria, Lindt &amp; Spr\u00fcngli o Villars in Svizzera: il segmento premium \u00e8 in crescita, sempre pi\u00f9 produttori puntano sulla massima qualit\u00e0. Il portafoglio spazia da ricette e composizioni intriganti, come il formaggio di montagna o il peperoncino, la canapa con la mocca, i liquori al lampone, il caff\u00e8-prugna con la pancetta caramellata, o le combinazioni con le spezie orientali.
